Reach Recipe: Black bean mango salad

Ingredients



2-15 oz. cans Black beans, rinsed and drained

1 can whole kernel corn, no salt added, drained

½ green bell pepper, chopped

½ red pepper, chopped

4 green onions, chopped

1 avocado, cubed (sprinkle with lemon or lime juice to prevent browning)

1 mango, cubed

2 Tbsp. Extra virgin olive oil

2 Tbsp. balsamic vinegar

Salt and pepper to taste

Directions



Mix all ingredients together.

Refrigerate 1 hour before serving.

Serve as a dip with whole grain baked tortilla chips or as a side dish.[[In-content Ad]]
